Duck Curry Puffs with Orange
Murabba
Serves 4
Ingredients:
Short Crust Pastry – 2 sheets
Oil to deep fry
Filling:
30mls duck fat or oil
½ cup leeks, chopped
½ cup onion, peeled and chopped
½ cup cooked roasted duck meat
1 teasp ginger paste
¼ cup fresh mint leaves, chopped
salt to taste
Method:
Cut the pastry into small rounds. Keep aside in a cool place.
For the filling, heat the duck fat, add the onion and leeks, sauté till
transparent.
Add all other ingredients, cool.
Place a little filling on each pastry round. Seal tightly and deep fry
on medium heat till golden brown. Serve immediately with orange murabba.
Orange Murabba
Serves 4
Ingredients:
4 oranges
1 cup sugar
1 star anise
1 pinch turmeric
Method:
Squeeze the juice of 2 oranges. Place remaining oranges, juice and
orange skins in a heavy bottom pan with ¼ cup water and gently simmer
with spices till the oranges are softened, add sugar.
As soon as it melts take off the heat and blend. Cool. Refrigerate and
use as required.
